Breakfast Sweet Potato – Cheddar Fritters

This recipe is just perfect in its simplicity and forethought. Because we all have some leftovers from time to time, or if you are making the meal prep for the week and want to use some of your usual food products, but in a new way – this recipe could help you!

I love to do meal prep.

It makes your life much easier and more structured, especially if you have kids or a 9-5 work schedule – it could become a game-changer for you!

I will share more options with you soon, but now here is one of the varieties you can use a simple baked sweet potato but level up it.

So let’s start.

Mix an egg, a pinch of salt, pepper, garlic powder, and smoked paprika in a middle bowl. Cut your baked sweet potato in half and mash it inside the halves, using the fork. Add baked sweet potato (just the mashed part, with no peel!) to the egg mass and combine everything well. Pour grated cheddar (or any cheese you love or have, actually! Sometimes I even use feta and it is so good! Mix all over again.

Heat the pan on medium heat (if you are using the non-stick one – skip this step, but if you need to – add some good quality high-heat cooking oil or ghee). Using a tablespoon, measure the batter on your pan, in any shape you prefer. Fry for around 3 – 4 minutes on each side (turn them gently), or until they are golden brown.

Additionally but not necessarily

you can cook some sautéed veggie. Any, to be honest. Nevertheless, here is my favorite one.

Cut separately zucchini, mushrooms, and beans.

Next step:

Blanch beans! In a small saucepan of boiled water with 1 teaspoon of salt, add beans and cook for approximately 4 minutes or when they turn brighter green. Then drain, and put into the bowl of cold water with ice, to cool them down. Just for 30 sec – 1 minute max. Do not leave them there for longer so they will not suck any extra water! Drain well. Set aside.

Heat a large pan on a medium heat well. Add some oil (if needed) and fry mushrooms for a couple of minutes, then add zucchini and continue to cook everything for another 3-4 minutes, stirring occasionally. Pour the Edamame and green beans in, and sprinkle with pepper, herbs, and soy sauce. Stir and cook for the next 1-2 minutes.

Place some fritters on a plate, top them with your veggies and/or yogurt/Tzatziki sauce, and enjoy an amazing breakfast! Alternatively, even lunch, or dinner. Because it is kind of the universal meal.

Ingredients

FRITTERS:

  • 1 Middle Sweet Potato (whole, baked)
  • 1 Egg
  • 1 cup Cheddar Cheese
  • Smoked Paprika
  • Garlic Powder
  • Salt & Pepper
  • High-heat cooking oil / Ghee for frying

SAUTéED VEGGIES (optional):

  • ½ Zucchini
  • 2 King Oyster Mushrooms (Eringi)
  • ½ cup Edamame beans
  • 5 long pods of green beans
  • 1 tsp Soy sauce
  • Dried Oregano or Italian Herbs
  • Pepper
  • High-heat cooking oil / Ghee for frying

Instructions
